In a one-time-only event, Publican Quality Meats will return to Publican’s American roots and celebrate the restaurant’s founding trifecta of oysters, pork, and beer. The evening starts with a welcome cocktail followed by an oyster shucking demonstration and a guided tasting of East and West Coast oysters. Then you’ll be off on a tour of American flavors by way of the restaurant’s most famed dishes, such as the Little Gem salad—complete with crispy fried pigs ears—hot charcuterie, grilled country ribs, ham chop in hay, farm chicken, or glazed pork belly. The feast ends with a seasonal dessert created just for the night by the award-winning pastry chef, Anna Shovers. Every course comes with beer pairings hand selected by beer director, Michael McAvena—including an autumnal pumpkin ale or two. The culinary journey will be narrated by the chef, featuring personal insights on techniques, ingredients, and the history of restaurant’s historic meatpacking location. Your evening will end with a parting gift chosen from Publican Quality Meats’ meticulously curated selection of artisanal pantry staples. In one unforgettable night, you’ll re-discover America and savor its best ingredients from land and sea.
Just for Sake of It:
A Tasting Exploration
Tuesday, October 29th - 7:00pm // $125
If Yusho was designed to dislodge outdated ideas about Japanese food, it’s greatest success is not in replacing those ideas, but enriching them with an entirely new perspective. With the same intensity of purpose, this special night will open your senses to the full spectrum of modern sake, inspired by the belief that the best way to learn about sake is to enjoy it artfully paired with food. Imagine Kalbi Beef Short Ribs paired with full-bodied Mizbasho Ginjo or duck breast paired with a mellow Kimoto Junmai. Don’t know your Ginjo from your Junmai? No worries. At this first-of-its-kind Yusho experience, General Manager and Certified Sake Professional, Timothy Koenig, will guide you course-by-course to a comprehensive understanding of Japan’s national beverage. Meanwhile aficionados will have the chance to discover the work of young brewers working in entirely new styles—including some sakes not available elsewhere or only recently imported. Journey to the bold side of sake and leave with a deeper appreciation of Japanese cuisine—and a gift from the chef.
A Celebration of Nomadic Bees
Wednesday, October 30th - 7:00pm // $125
In 2012, Executive Chef Sarah Grueneberg, a Top Chef finalist, journeyed to Italy to study the ancient art of beekeeping and produce her own mono-floral honeys with noted nomadic bee keeper Andrea Paternoster. Here she discovered Paternoster's technique of moving his bees across the Italian countryside in search of the perfect blossom. Now, in a spectacular first-ever menu, a newfound passion meets Old World technique with Chef Grueneberg’s multicourse showcase of honey’s delicious possibilities. From roasted sea scallops with cardoon honey and truffle to suckling pig with polenta and sunflower honey, each course will be paired with wine from the restaurant’s famed collection. And to top it off, every guest receives a sweet send-off gift selected by the chef. Don’t miss this once-in-a-lifetime experience that will have you waxing poetic about the enduring magic of bees—and Spiaggia.

And in keeping with the restaurant’s acclaim for pushing the boundaries of presentation, the menu will use a large-plate format for dishes that are as visually arresting as they are delicious. You don’t want to miss this opportunity to discover what happens when food becomes art and foraging becomes a feast.
A Journey Through the Amazon
Wednesday, November 20th - 7:00pm // $125
For this exclusive Global Tasting Tour event, Chef Zarate will take guests to the heart of Peruvian cuisine with a flavor expedition through the Amazon. The sweet, sour, and spicy flavors of the region will converge in dishes such as Tacacho Con Cecina, a Peruvian cured pork accompanied by grilled plantain and huacatay-jalapeño sauce, and Juane de Pato, a roasted duck breast with pickled radish atop plantain-leaf-steamed rice. Add selections from Picca’s famed menu of classic and reimagined Peruvian cocktails—that Pisco Sour at your local bar doesn’t stand a chance—and the night is complete. Be sure to bring your friends for this dining adventure: Picca means “to share” and as former head chef to 12 siblings, Chef Zarate creates meals that quickly become shared memories.
Hinoki & the Bird
